Commonly referred to as poor mans tenderloin. Prepared correctly Eye of Round Roast Beef Eye Round is suitable for a variety of cooking methods. Both dry and moist cookery can be utilized to prepare a roast. The grain runs lengthwise in the Beef Eye Round. Because it is a very lean cut, special care in cooking and preparation must be taken to keep this cut tender. Hints for creating a better eating experience include: Cut across the grain. Don't overcook. Avoid cooking at high heat.

Both dry and moist cooking methods can be used to prepare the Chuck Roast. However, cooking with moist heat or braising, is recommended.
